I haven’t done much in the last three weeks, other than start my new job. I admit I’ve been riding high on the change for a while and haven’t put the amount of effort in that I should. I’ve completed my third week, and I really think that I’m going to like it.
One thing I have tried to work on is eating healthier. Mostly this means that I steamed a bunch of vegetables and mixed them with noodles. I did make sure to pick organic. Unfortunately, that doesn’t mean that I am always willing to eat it. My work provides us with pizza so more than once I have given into temptation and eaten that instead. I have also come to the conclusion that I shouldn’t make too much at once. It has been a week, but I haven’t even managed to eat half of what I cooked. For want of additional content, I’ll list what I made. There are no actual measurements, but I don’t think it actually matters for this kind of thing.
- 1 pkg of organic baby carrots
- 1 head of organic cauliflower
- 1 bundle of organic asparagus
- 1 bag of organic bowtie noodles
I chopped up the cauliflower and asparagus, and then steamed the veggies individually on the stove. It took a really long time. I think from start to finish, this whole process took about 2 ½ hours. I cooked the noodles and put everything in a large tupperware container. I added basil, parsley, garlic, and salt, before mixing it all together. Next time I think I will change the seasoning a little bit, in addition to using smaller portions.
I have also gotten my college transcripts. I think I will try online classes. Now that I have to spend a little less time working overtime and have a bit more disposable income, I think that it could be a good option for me. I really want my college debt paid off, but right now I can actually afford to finish my degree, which could help me pay off the rest of my debt faster. We’ll see.
As for the hair, no picture. I did go get it colored, but it ended up being more burgundy than purple. I still like it, but it just wasn’t what I had in mind. Anyway, it just doesn’t show up well in a picture.
